Cheesy Cauliflower Soup

So I saw this recipe on Rachael Ray and Ty loves Cauliflower so last night I tried it out. It goes a little something like this:
In the bottom of your soup pot saute 1 small onion with some EVOO, add about 1 tsp of garlic salt
Add 2 tlbs of butter
Add 2 tlbs of flour
mix this together
Add 4 cups of chicken stalk
Add 4 cups milk ( I used 1%)
Add 3 cups of chedder cheese, continually stirring
add about 1 tlbs of mustard
Add another tlbs of garlic salt/powder

While you are doing this you should be boiling a whole head of Cauliflower chopped up. Make sure it is very soft. Once the Cauliflower is done throw into the food processor to finely chop up and smash. If you don't have a food processor just use a mashed potatoe masher and that works great, throw the Cauliflower in with the soup.

I added about 1 tsp of pepper

And there you go, it is easy and yummy

Ty and I also make our own little garlic breads. We put butter, garlic salt and parmesean cheese onto english muffins, stick them in the oven on broil for about 5 minutes and there you go! Yummy!

My made up Chicken Noodle soup recipie

So I just made this one up,I am pretty sure it is similar to all of the other recipies out there, but this is what I did.
In a crock put put in the bottom one small can of cream of chicken soup
3 chicken breasts, sprinkle garlic salt and pepper on them put in crock pot
dice up one onion put in crock pot
dice up 4 celery stalks into small pieces put in crock pot
dice up 2 carrotts and put into crock pot
pour one small can of chicken broth
put another small can of cream of chicken soup on top of veggies and mix around
Sprinkle another tablespoon of garlic and probably 1/2 teaspoon of pepper
Cook on high for about 3 hours
After three hours and chicken is cooked, turn crock pot on low for about another 2 hours, by this time the chicken should shred apart with two forks
Cook egg noodles, drain
combine egg noodles and chicken mixture into big pot on the stove, add another can of chicken broth let simmer about 15 mins and you are good to go!

These biscuits I did not make up. I got the recipie from a cook book and they tasts exactly like the Red Lobster biscuits all you do is mix 2 cups of Bisquick mix with 2/3 cups milk 1/2 cup of grated cheese, mix with a mixer for about 30 seconds until a dough forms, grease cookie sheet cook for about 9 minutes, melt 1/4 cup of butter and 1/2 tsp of garlic salt after biscuits are cooked brush butter mixture onto biscuits and serve warm. Oh so good!

Stuffed Green Bell Peppers

I made these last night for dinner, for the first time ever and they turned out pretty good. They were fairly easy to make, and pretty healthy, really the only fattening thing is the cheese. This is the beginning of the peppers, inside is marinara sauce and cheese
This is the meat mixture that goes inside of the peppers

This is the final result of the peppers...
Ingredients:
4 Large green bell peppers
1 pound of lean ground hamburger or turkey
1 small onion chopped up
1 large can of stewed tomatoes (juice drained out)
garlic salt
black pepper
Worchestershire sauce
1 small jar marinara sauce
cheese
2/3 cups of rice
1/3 cup water
Cut the tops off of the peppers and take insides out, boil until peppers are bendy sprinkle salt inside, set upside down to dry
Brown hamburger and onions, add water, rice, tomatoes, Worchestershire sauce about 2 tlbs, garlic salt about a 1 tlbs and pepper about 1 tsp, let simmer until rice is soft about 15 mins, drain excess juice from whole mixture
In bottom of peppers place a large spoonful of marinara sauce and some cheese, pile in the meat mixture as much as you can, add more marinara sauce on top of that and cheese, cook in the over for about 12-15 mins at 350 degree's
Serve and enjoy!

Mom's Minestrone Soup

So in our effort to try and eat healthy I have been trying to make things that are healthy for us and very yummy as well. This is one of Ty's favorites and I got the recipie from my mom. It is homemade minestrone soup and it really is SO yummy and pretty easy to make! I took pictures of the three different steps of how the soup looks while you are making it! When we aren't being so healthy it really tastes good with sour dough bread, but we have been cutting out a lot of carbs, so last night we ate it with no bread and it was still very good! 4 strips of bacon cut into small square pieces (raw)
3 garlic cloves
3 T olive oil
1 small onion chopped up
4 celery stalks chopped up
1/2 head of cabbage chopped up
2 carrotts chopped up (we leave out the carrots)
1 can of green beans (juice included)
1 14-16oz can diced or crushed tomotoes ( juice included)
1/4 cup dry or fresh chopped up parsley
1 T of dry sweet basil
1 small can of beef broth
1 small can of Campbell's Bean & Bacon Soup
Parmesean or Mozzerella cheese to top on soup

Turn pot onto medium heat, cook bacon until transparent, add onion, garlic cloves ( mashed up) and olive oil, sautee for about 10 mins
then add all vegetables ( of course you can pretty much subsitute any veggies you want here, if you don't like some or want to add more)
Pour juice from beans and tomatoes in with the soup
Cook on low heat for about 20 mins
Add broth and bean and bacon soup stirring until everything looks well mixed together, if soup looks too thick you can add an additional can of tomatoes, which I do sometimes or about 1 cup of water. Top with cheese and enjoy this very healthy soup!
